Creamy Coconut-Almond Date Shake

It’s been a while since I did a health post so I thought I’d do you one better and give you a great healthy recipe. After all of those holidays drinks and treats I’ve been feeling a little sluggish and not healthy. Just because its cold and holiday foods are plentiful doesn’t mean I can be too lax about what I’m feeding my body. I whipped up this little snack to satisfy some cravings and keep me feeling healthy and strong.


This is probably one of my all time favorite snacks when I’m craving something sweet and creamy like a milkshake or a blended frappe with whip. Unlike those unhealthy options this one contains no dairy or espresso (sorry) and is packed with protein for a quick pick me up. Don’t get me wrong, I’m all for ice cream shakes now and then but I wanted something healthier with a little more substance that really satisfied my craving without leaving me feeling bloated and sluggish. This is a great option because the protein keeps me full longer and gives me some much needed energy without sacrificing taste. PLUS for those of you who will be choosing to eat healthier and exercise in the New Year bookmark this one for when you need to “treat yo self” without falling off the wagon.


Creamy Coconut-Almond Date Shake (2 servings)
1 cup coconut milk
1/4 cup raw almonds (soaked) or unsweetened almond butter
5 very soft medjool dates, pitted
1 tiny pinch of sea salt to taste
1 1/2 cups of ice
1/4 teaspoon vanilla (optional)
1/8 teaspoon cinnamon (optional)

Blend until smooth. If you choose to use whole almonds (which is how I do it) it may require some extra time in the blender, its optimal if you can soak your almonds beforehand to soften them up a bit.
For extra decadence top with a sprinkle of cinnamon and serve. The recipe makes 2 servings (but I always drink them both).
