How incredible is the color of this smoothie? I cannot get over how vibrant it is. Note, these photos have not been edited, this is really what color it is. Smoothies are a staple in our house, they are the breakfast of choice for the adults because they are easy to make and take but can still made into a full meal. The toddler thinks they are a treat no matter how much veggies I pack into it. He loves pulling out fruit and helping me load up the Vitamix and watching it blend up. I like to get creative with my smoothies and try new things but the boys are all loyal to their favorites. I know I’ve said it before but my favorite protein brand is Vega. It’s entirely plant based and sugar free which makes it perfect for smoothies, we use the entire line they make.
Today’s smoothie is a tropical dragon fruit smoothie that is healthier than it looks, I promise! I saw pink dragon fruit at the market and just couldn’t resist. I accidentally left this one in the fridge and its green leaves turned a bit yellow which was sad but it tastes just as good. The smoothie gets its color from the frozen red dragon fruit I got, the brand is Pitaya Plus and its amazing. I’ve listed the recipe below for one serving. Not only did my toddler drink his glass but drank half of mine as well, I had to fight to get any. Toddler approved!
- 1 cup coconut water
- 1/2 packet of Pitaya Plus
- 1 frozen banana (fresh works too)
- 1/4 cup frozen mango
- 1/4 cup frozen pineapple
- optional- 1 scoop Vega protein and greens in natural flavor
